It’s Almost Rhubarb Season, Be Ready with This Recipe
Okay folks, this couldn’t be easier or more rewarding. What I love about it is you can scale it to the exact amount that you have or need.
Wash and cut up strawberries, chop rhubarb into 1/2″ pieces.
Sprinkle with a teaspoon of cornstarch (only if you already have it in the house) and sprinkle with a touch of sugar (truly not much, a tsp to Tbsp for up to 8 ramekin servings.)
Put fruit in ramekins on baking sheet. Pack’em high ’cause fruit will cook down and shrink.
In a separate bowl, mix some brown sugar, rolled oats, touch of flour and a few tablespoons of butter to make a crumble topping. Put a handful of topping gingerly on each
ramekin and then bake at 375 for about 35 minutes, until topping turns golden and fruit is bubbly and oozy. DEEEELISH, I Promise. Best served slightly warm, and vanilla ice cream never hurt anyone, just sayin’.

Please join us at LUNAFEST to enjoy 9 incredible short films by and about women. Beneficiaries of the evening are the Girls’ Leadership Worldwide program at the Eleanor Roosevelt Center @ Val-Kill and Breast Cancer Prevention Partners.
There will be a pre-screening buffet supper/reception, and fantastic raffle prizes. (You might even win a two night stay here with us!) Tickets for the supper and film screening are $40. All tickets, including raffle tickets, must be purchased in advance of the event.
More than 20 venues participate in this annual fund raiser for our local hospital. It is a terrificly fun evening to walk around the village eating and tasting your way through. Come Hungry. Tickets are $75/per person and benefit a wothwhile cause.
